Andrea's Original RAW Energy Balls (vegan)

I created this recipe a couple of years ago when a co-worker commented that he could never eat anything I brought because he was vegan. CHALLENGE ACCEPTED! I tried a few different recipes, tweaked it a little every time I'd make them and have now achieved "Protein Ball Perfection!"

This is my on the go breakfast, hiking snack and sometime late night "dang I need something chocolatey" in a pinch treat. Did I mention, HEALTHY treat!


*You really need a food processor to make these... not impossible by hand but MUCH less likely to be successful.

Andrea's Original RAW Energy Balls (vegan)


INGREDIENTS:

1 cup rolled oats

1/4 cup chocolate chips

1/3 cup peanut butter (or other nut butter)

1/4 cup ground flax

1/4 cup hemp hearts

1/2 cup unsweetened shredded coconut

1/2 cup walnuts (or other nuts of choice)

1/2 cup pitted dates

2 tbsp. cacao nibs (optional)

1 tbsp. coconut oil






HOW TO:

1.) Throw everything into the food processor

2.) Pulse until everything comes together and becomes sticky enough to form a ball, about a minute and a half to 2 minutes. Using a spoon/spatula, pull the ingredients in the bottom of the bowl up so that everything gets properly chopped and mixed up.

3.) Press into small 1 " balls (or larger if you prefer, can't go wrong) and freeze for 30 minutes before putting into an air tight bag or container.

*I keep mine in the freezer, as they thaw in 5 minutes and keep better than in the fridge.


Makes about 30 small balls.
