Apple Blackberry Fruity Crisp

I am admittedly a bit of a lazy baker (hence my tagline). I love recipes that are easy to prepare and execute- but delivers 100% on taste and presentation. Fruit crisp is a star on both counts. Fruit crisp is often thought of as a summer dessert- but it's so warm and comforting (sort of like a big bowl of oatmeal). I think it's up there with soups and stews in the comfort food department, and just might be the perfect easy Autumn dessert - with or without ice cream.

Apple Blackberry Fruity Crisp

INGREDIENTS:

FILLING:

1/2 cup granulated sugar

2 tbsp. corn starch

6 cups fruit (frozen or fresh)

1 tbsp. fresh lemon juice


TOPPING:

1 1/2 cup oats

1 cup All Purpose flour

1/2 cup light brown sugar

1/2 tsp. salt

3/4 cup unsalted melted butter

1 tsp. vanilla

1/2 tsp. cinnamon


HOW TO:

FILLING:

1.) Pre-heat oven to 350 degrees

2.) Butter a 9x9 or 9x13 glass dish

3.) Whisk together the white sugar and cornstarch

4.) Add the fruit and lemon juice

5.) Pour into glass dish


TOPPING:

6.) Combine oats, flour, br. sugar and salt in a bowl

7.) Drizzle melted butter and vanilla on top and mix thoroughly

8.) Sprinkle the topping over the fruit, leaving some larger chunks of crumble topping intact

9.) Bake 30-35 minutes. You know it's ready when it is bubbling and golden on top

10.) Cool 15 minutes and serve it up!


NOTES:

*I prefer a little more fruit, so when I make this again I'll do 8 or 10 cups of fruit and add an extra 1/4 tsp. of cornstarch and a little extra splash of lemon juice OR only use HALF the crumble topping and freeze the rest for a future crumble

*You don't need to add the FULL amount of sugar for the filling if your fruit is already very ripe and sweet
