Cheddar Chile Savoury Shortbread

I really have no words for these savoury shortbread other YUM. They are spicy, they are cheesy, delicate, tender and divine. Sounds like I'm describing the perfect man! You can tweak the spiciness of these by adding less chile flake. Trust me on this- you will LOVE savoury shortbread, and your friends and family will love you more when you bake them. Truth.

INGREDIENTS:

3/4 cup of butter (room temp but still cool)

1/2 tsp salt

1/4 tsp dry mustard

1 1/2 cups old cheddar (grated)

1 1/4 cups all purpose flour

1 tsp. chile flakes


HOW TO:

1.) Preheat oven to 350 F and line cookie sheets with parchment paper or silicone mats

2.) Cream the butter, salt and dry mustard in your mixer. Use either stand mixer or food processor)

3.) Add the old cheddar, flour and chile flakes and mix until it forms a slightly sticky ball (it kind of just does it on its own)

4.) Roll into 1" balls and flatten them just a bit

5.) Place on cookie sheet approx. 1 1/2 apart as they spread a bit

6.) Bake at 350 F for 14-16 minutes until just slightly golden at edges


NOTES:

*You can omit or cut in half the chile flake it you don't like spice
