Coconut Macaroons

This might be the easiest 5 ingredient recipe around! No mixer required, super easy prep, bada bing, bada boom - you've got coconut macaroons. They are tender yet crispy, sweet and coconutty and 100% yummy!

INGREDIENTS:

-1 lg. egg (white only)

-pinch of salt

-200 grams (mls) sweetened condensed milk

-1 tsp. vanilla

-5 cups unsweetened shredded coconut





HOW TO:

1.) Heat oven to 300 degrees F and line cookie sheets with parchment paper or silicone mat

2.) In a large bowl, whisk your egg white and salt until frothy, about 2 minutes

3.) Add the sweetened condensed milk and vanilla and blend well

4.) Fold the shredded coconut in with a spatula until well combined

5.) Using a teaspoon, scoop small haystack mounds onto your baking sheet abut 1" apart

6.) Bake for approx. 20 minutes until slightly golden


NOTES:

*Makes about 40 small cookies

*If you prefer them sweeter use sweetened coconut

*Will keep in an airtight container for about a week

*Can also dip them in chocolate for a festive look (and more yum!)
