Dark Chocolate Olive Oil Cookies

These cookies are the bomb. And cookies with heat healthy oils?? That's a yes from me!!!

I've made them a number of times and haven't been disappointed yet! I DID over bake a batch one time, bit I ground the cookies up in my food processor to make crumbs that I used in my Caramel Bourbon Cheesecake in the fall, and that was ONE delicious crust!

INGREDIENTS:

-3/4 cup high quality olive oil (supermarket brands also just fine!)

-1 tsp. vanilla

-2 eggs

-3/4 cups granulated sugar

-3/4 cup packed brown sugar

-2 1/2 cups all purpose flour

-1/4 tsp. salt

-1 tsp. baking soda

-8 ounces dark chocolate (chopped finely)

-flaky sea salt (ie. Maldon)




HOW TO:

1.) Preheat oven to 375 degrees F and line 2 cookie sheets with parchment paper or a silicone baking mat

2.) Combine olive oil, eggs, vanilla and 2 sugars and mix on medium speed until well combined, scraping down the sides of the bowl before the next step

3.) Add the flour, baking soda and salt and mix until dough just comes together

4.) Add the finely chopped chocolate and mix it in. Smaller bits are better than larger for this recipe as the dough isn't very sticky and the larger chunks kind of "fall out" of the dough

5.) Make small (1-2" balls) and place approx. 2" apart on the cookie sheet

6.) Sprinkle the cookies with a little flaked sea salt

7.) Flatten the balls a bit with a fork or your hand and bake for 9-12 minutes ( I like them a little chewier so 9 minutes is what I do)
