Double Chocolate Candy Cookies

These cookies are double trouble… Double chocolate, all the candy, three different flavours to suit your mood! I can never decide which flavour I want, so why not choose all three? INGREDIENTS:

- 1 cup butter, room temperature

- 1 1/2 cups white sugar

- 2 eggs

- 2 tsp. vanilla extract

- 2 cups all purpose flour

- 2/3 cup good quality cocoa (unsweetened)

- 3/4 tsp. baking soda

- 1/4 tsp. salt

- Approx. 1 1/2 - 2 cups chocolate chips or whatever candy you like

(Smarties, M&M/s, Reece Pieces, Junior Mints or Caramels





HOW TO:

1.) Pre-heat oven to 350 degrees F and line your cookie sheets with parchment paper or a silicone mat

2.) Combine your flour, baking soda and salt in a medium bowl and sift in your cocoa

3..) Beat your butter, sugar, eggs and vanilla until fluffy

4.) Add the dry ingredients to your wet ones and mix until well combined

5.) Make 1" balls and place about 2" apart on your cookie sheet

6.) Flatten the balls a bit with a fork that you dip in water (to prevent sticking)

7.) Press the candies into your cookies. I did 3-5 Smarties or Reece Pieces or one single Junior Mint in the centre (mix the chocolate chips in with the dough if you are using those)

8.) Bake 8-10 minutes. I like my cookies a little crispy on the edges and soft in the middle, so don't bake for any longer than 9-10 minutes.

9.) Transfer to a cooling rack and keep in an airtight container for a week to 10 days ( if they last that long)
