Easy Peasy Cream Cheesy Carrot Icebox Cake

Need a dessert for tonight that takes 10 minutes to prepare (and a couple of hours to freeze)? Look no further! I was too tired to bake anything complicated- so that’s where the icebox cake came in to save the day! Whether you have some semi- stale cookies in the cupboard or some cake castoffs like I had- you can’t really go wrong with this one!

Easy Peasy Cream Cheesy Carrot Icebox Cake


INGREDIENTS & HOW TO:

1.) Line an 8x8” baking dish with parchment or waxed paper

2.) In a blender or food processor combine...

-1 can of sweetened condensed milk

-1 pack of cream cheese- room temperature

-1 tsp. Vanilla

-2 tbsp. Milk or milk alternative

3.) Mix until pourable.

4.) Place a layer of the cake or cookies in the bottom of the pan.

5.) Pour half the cream cheese mixture on top.

6.) Repeat steps 4 and 5.

7.) Freeze for 2-3 hours

8.) Garnish with whipped cream and whatever you like depending on the flavour of the cookies/ cake you’re using. I used chocolate raisins and freshly grated nutmeg, since my cake was carrot cake.
