Lemon Parmesan Crisps

This recipe is an oldie but a goodie! I've been making this every Christmas for years, and it was one of my signature savoury shortbread when I had my cookie business. It was by far one of the most unique products I sold, and a favourite of many. This recipe is the original, I had to tweak it when I made it to sell, as the amount of parmesan in the original recipe (this one) would have made it was too expensive to sell. I'll eventually post hat adapted recipe as well - one day! These crisps are cheesy, lemony, peppery and unlike any cookie you've ever had!

INGREDIENTS:

1 1/2 cups grated parmesan cheese

1/2 cup + 3 tbsp. all purpose flour

1 tsp. lemon zest

1/2 tsp. ground black pepper

pinch cayenne pepper

1/4 cup butter (cubed, room temp. but still cool to touch)

1 tbsp. water

2 tsp. fresh lemon juice


HOW TO:

1.)Pre-heat oven to 375 degrees F

2.) Prepare your cookie sheets by lining with parchment paper or a silicone mat

3.) In a food processor or stand mixer pulse/mix together the parmesan cheese, flour, lemon zest, black pepper and cayenne until mixed

4.) Add the butter and pule/mix together until it has the texture of coarse meal

5.) Sprinkle with the water and lemon juice and pulse/mix until the dough comes together and kind of forms a ball on its own in the mixer

6.) Knead the dough a bit to compress it, then form it into a fairly tight log approx. 1 1/2 to 2" wide

7.) Chill 2 hours

8.) Slice approx. 1/8- 1/4" width and place on cookie sheet about an inch apart

9.) Bake 10-12 minutes until golden


NOTES:

*The cookies can cool on the cookie sheets

*If you don't like spice omit the cayenne pepper
