Peanut Butter Icing

What do you bake for a kid (well, 16 year old kid) who LOVES peanut butter and chocolate EVERYTHING? Chocolate cupcakes of course, with the yummiest peanut butter icing ever! This icing has a relatively small amount of sugar in it, which is a good thing considering all the peanut butter cups, peanut butter M&M's and Reece's Pieces that are IN and ON it!

*This recipe is from Sally's Baking Addiction- I chose it because it had the least amount of sugar of all the recipes I found online.

INGREDIENTS:

5 tbsp. unsalted butter (room temp.)

1 cup creamy peanut butter (don't use natural- use one that doesn't require stirring)

1/3 cup heavy cream (room temp.)

1 tsp. vanilla

1/4 tsp. salt (omit if you use salted butter)



HOW TO:

1.) Cream the butter until smooth, about 1 minute (make sure the butter is room temperature)

2.) Add everything else, beat on high speed for 3 minutes

3.) Spread on your cupcakes or cake, or fill a piping bag and decorate as you wish!

NOTES:

*If the icing seems too loose, add a little more icing sugar, if it seems too think add a little more cream

*DO NOT use natural peanut butter (the one where the oil separates) it will not work. I used sugar and salt free Kraft peanut butter
