Peanut Buttery Cookies (Gluten Free!)

These peanut butter cookies are so good, they don't even consider asking a chocolate chip to join them. They are so pure and simple, all you need is a bowl, wooden spoon, the 6 ingredients, 25 minutes and whammo- you have cookies. They are tender and oh so peanut buttery, hence the name. Just TRY and eat only one!

Peanut Buttery Cookies (GLUTEN-FREE!)

INGREDIENTS:

3/4 cup of natural peanut butter (I use Adams)

3/4 cup of sugar (mix of dark brown sugar and coconut sugar)

1 1/2 tsp. vanilla

1/4 tsp. salt

1/2 tsp. baking soda

1 lg. egg (straight from the fridge)

OPTIONAL:

Flaked or regular sea salt for tops


HOW TO:

1.) Pre-heat oven to 350 degrees F

2.) Line 2 cookie sheets with parchment paper and place oven racks to as close to the middle as possible

3.) Put all ingredients into a med. sized bowl and mix by hand (or you can use a mixer if preferred) about 1 minute

4.) Once your dough has firmed up enough to scoop, make 24 tablespoon sized balls and place on cookie sheets about 2 inches apart as they will spread a bit

5.) Sprinkle flaked sea salt on the tops (optional) and bake for 11-14 minutes depending on how chewy or crispy you like them

6.) Let cool on the cookie sheet for 1 minute, then remove and place them on the cooling rack

NOTES:

*ONLY use natural peanut butter

*Make sure you egg is cold straight from the fridge
