3 Layer Vanilla Cake

This is the easy and versatile vanilla cake recipe you've been looking for!

Since it uses three 6" pans, it's not a gigantic cake, it's a "just right" cake.

You can layer it, you can sculpt it, you can colour it with food colouring to make it fun and best of all -IT TASTES AMAZING! Not all cakes are created equally when it comes to taste and texture. I like this recipe because not only is it tasty, it's also super moist. And since it is quite a dense cake, you can make multiple layers (this recipe is three layers) but I don't see why you couldn't add a couple more if you needed more height.

INGREDIENTS:

-2 cups All Purpose Flour

-2 1/2 tsp baking powder

-1/2 tsp. salt

-1 cup unsalted butter, room temp.

-1 1/2 cups white sugar

-1 tbsp. vanilla

-4 lg. eggs, room temp.

-1 cup milk, room temp.

-1/4 cup vegetable oil









HOW TO:

1.) Preheat oven to 350 degrees F and prepare cake pans by spraying with cooking spray and cutting parchment paper circles the size of your pan (6" round)

2.) Whisk the flour with the baking powder and salt in a med. bowl and set aside

3.) Fit the stand mixer with your paddle attachment and cream the room temperature butter for a few seconds to make it creamy and smooth

4.) Sprinkle in the sugar and whip it on med/high speed for 8-10 minutes until nice and fluffy

5.) Turn the mixer to low and beat in the eggs one at a time, beating for a minute in between each egg and scraping down the sides of the bowl in between each new egg

6.) Add the vanilla and the oil, mix to incorporate

7.) Add the flour and the milk in a few additions starting and ending with the flour.

ie. Add 1/3 flour then mix. Add 1/2 the milk then mix, another 1/3 of the flour and mix, the rest of the milk and mix then the last of the flour and mix for a few more seconds to finish it off

8.) Divide the batter between the 3 pans and bake for 25-30 minutes or until the toothpick comes out clean (I find I need to bake mine a good 5 minutes longer as I have an unreliable oven)
