Vanilla Bean Sandwich Cookies

These cookies are packed full of vanilla bean flavour, and are made SO PRETTY by the vanilla bean seeds! They remind me of sweet little clam shells fit for a mermaid party! Watch the YouTube video HERE!

COOKIE INGREDIENTS:

1 1/2 cups All Purpose Flour

1/2 tsp. salt

1/4 tsp. Baking Powder

3/4 cup Unsalted Butter (room temp.)

1 1/4 cups white sugar

1 Vanilla Bean Pod (seeds scraped out)

2 lg. Eggs

FILLING:

1 1/2 cups icing sugar

3 tbsp. Unsalted Butter (room temp.)

1 1/2 tsp. Vanilla Extract

1 -2 tbsp. Milk or Cream for thinning


HOW TO:

1.) Pre-heat oven to 375 degrees F and place parchment paper on 2 cookie sheets

2.) Whisk together dry ingredients in a small bowl and set aside

3.) Cream the butter, then add the sugar and vanilla bean seeds and beat until creamy

4.) Beat in the eggs one at a time

5.) Add the dry ingredients and mix until just incorporated

6.) Make 1" balls and place on cookie sheet 3" apart as they will spread a bit

7.) Bake for 10 minutes until just golden on the edges. Cool on the sheet a couple of minutes before moving cookies to cooling rack

8.) Make the icing by creaming the butter with the icing sugar and vanilla, then slowly adding in enough cream to make a thick, smooth icing

9.) Use approx. 1-1 1/2 tbsp. of icing per cookie, making sure to spread to the edges

10.) Place the second cookie on top and squeeze gently to ket the icing bulge a little on the edges

11.) Roll the edges of the cookie into the sprinkles
