Vanilla Monster Sponge Cake Part 1 (THE CAKE)

This is a monster of a cake, and not just in subject matter. It was a MONSTROUS amount of cake batter. But, it was EXACTY the amount of batter needed to carve a nice round monster head, and give him the purple hair-do he deserved.

I added the surprise of sprinkles in the middle layer, which is always a good time!

VANILLA SPONGE CAKE

INGREDIENTS:

6 3/4 cups All Purpose flour

6 1/4 tsp. baking powder

1 1/4 tsp. salt

2 1/2 cups unsalted butter (room temperature)

6 3/4 cups white sugar

2 1/2 tbsp. vanilla

10 lg. eggs

2 1/3 cups milk (20 oz)

5/8 cup vegetable oil (5 oz)


HOW TO BAKE THE CAKE:

1.) Preheat oven to 350 degrees.

2.) Prepare your three 9" round baking pans by spraying them, cut out a 9" round of parchment paper then spray the bottom again.

3.) Whisk together your flour, baking powder and salt.

4.) Using the paddle attachment for your mixer, cream the butter for 20-30 seconds until smooth.

5.) Add the white sugar then whip on medium-high until light and fluffy- about 8 or 9 minutes, scraping down the sides of the bowl halfway.

6.) Turn mixer to low and add the eggs one at a time, mixing for about 45 seconds per egg.

7.) Add the vanilla and oil and mix to incorporate.

8.) Add your flour mixture in 4 parts, starting and ending with the flour and alternating with the milk.

ie. 1/4 of the flour (mix to incorporate) 1/3 of the milk (mix) 1/4 flour (mix) 1/3 of the milk (mix) etc. until it's all gone.

9.) Once it's all been added mix for a final 15 seconds.

10.) Bake 25-30 minutes, but it's always best to do a toothpick check and make sure it comes out clean. It's important not to over bake though, as the sides of the cake will shrink in and not be as straight as you want

11.) Cool until room temperature and cut the rounded tops off to make the cake flat and ready for assembly.


NOTES:

*Make sure your cold ingredients are all room temp.
