Yummiest Spicy Hummus

I am telling you, and I know I might be biased but... this is truly the best and easiest hummus recipe IN THE WORLD. Yes, I said it. The secret is simple - Spicy banana pepper rings (plus a little of the brine). Honestly, this is what makes ALL the difference! I've doled this recipe out to people who said, "But Andrea, why doesn't mine taste like yours?" I'd ask them if they used the hot banana peppers and the answer was always no, they'd used jalapenos or something else. That would taste great too, don't get me wrong- but this particular flavour can be attributed to those cheap and cheerful pickled peppers. Of course, you can just make the BASIC recipe below if you don't like it spicy!

INGREDIENTS:

BASIC RECIPE

-15 oz. can chickpeas

-Juice of one lemon

-3 tbsp. olive oil

-2 tbsp. tahini

-1 clove of garlic

-1/2 tsp. ground cumin

-1/2 tsp ground coriander

-sea salt and pepper to taste



AMPED UP:

-A handful of fresh dill or a sprinkling of dried dried (approx. 1 tsp.)

-A handful of fresh parsley

-Hot banana peppers rings to taste plus a little of the brine (as much as you want to thin in out a bit


HOW TO:

Place all the ingredients in your food processor or blender and pulse or mix until smooth


That's it, SO easy. Serve with pita bread/ chips, tortilla chips, raw veg or whatever!
